Mesquite is a fine tasting wood to cook with, however it is hot burning and has a stronger flavor than Hickory... If your client wants to use Mesquite, go ahead, keep watch on the temps. and color of the meat.It will take on a darker hue,but that is a good thing for this wood, to a point!Mesquite can get bitter, as you cook(burn)it watch the end of a stick and see if it is bubbling liquid out. This is sap, and an indication it is greener than you need to cook with;to fix that, remove some of the Mesquite and add a stick of (say)maple to tone it down.Hickory would, at this time, be too heavy for the meat(the Mes. would have bittered and the Hic. will continue to force the flavor in... All , in all, Mesquite is GOOD, and a treat for those raised on it - ---------
