I am also a dealer for Backwoods smokers and BBQ guru which is a power draft control to aid in the running of your pit. Fire away when ready.

I am rather new to the art of smoking meat and I have started out by building my smoker from a clay flower pot and a hot plate. It works sort of well and I have done a lot of pork shoulders on it. I am looking to buy a smoler that is a bit more versatile, has more space inside, and is more reliable. I don't know what the best option is though. I would like to go either propane, or electric. Are there any clear advantages to either way? I like electric because it seems to give a lot of control over temperature. I have heard that propane is not desireable because a byproduct of propane combustion is water, and that it can cause a sooty deposit on the meat. Is this true?

So please offer some guidance.
