    Slightly O.T.: How Can I Make My Own Hot Sauce?

    I`m a bbq fanatic and someone just gave me a ton of hot pepper plants that are bearing a ton of peppers. What are some good and relatively easy recipes for hot sauce?

    else you like(sometimes a sweetener like sugar or fruit juice). You can puree this stuff up raw and store it, or you can cook it so that you cook down the water and have a more concentrated sauce, whatever.

    beginning to doubt her. Up until last year, I was growing some nice Thai peppers and I put them up just like Jack said. Good stuff but not for the faint hearted.

    On a scale of mild to hot, these rate "lava".
    To tame them for sauces, dry them in the sun or dehydrator, then roast them - *outside* on the grill that you keep *outside* - until they`re dark brown/almost black. Did I mention that you roast them *outside* and not on the stove or in the oven?
    Then crush them with mortar and pestle. Changes the nature of the beast... Use them fresh to cauterize wounds.

    it`s a fact. Chef`s right about those *REAL* Thai peppers being some mean little mother`s. I hand carried some roasted peppers back from Bangkok a number of years ago. I watched (from a distance) while fresh Thai peppers were roasted in an iron skillet over an hibachi well away from the house. I don`t know how the cook managed it because I couldn`t get closer then about ten feet. The upshot is, not all of the seeds were killed and I managed to cultivate enough to grow my own crop back home. Good stuff Maynard. Nothing else tastes the same. BTW, Thai chili`s come in three distinct heat levels. The mildest competes with the lowly Jalapeno while the hottest tries to compete with the Habenero.

    Got any seeds to share?? Been trying to switch to all heirlooms her on the farm. Got a few nice veggie seeds to swap if you are interested in that sort of thing?? Care,
