8 hours to cook spares?
I just read about some bbq place (I think in Memphis) that claims the smoke their ribs for 8 hours at 225.
Does this sound right and how would going about double the time what I have found necessary, help out?

like a leaf on everything you read about Qin. I would suggest you stick with the BBQ FAQ until you`ve learned the basics well. Then you can experiment til your heart`s content.

I did some ribs last wekeend (see my long post) for about 4 1/2 hours and they were as tender as can be although they could have gone a bit longer to render out some more of the fat.
Anyways was just curious if this 8 hour thing was for real or not.

happy with the outcome, stick with it. Only make minor, experimental changes. I believe one of the great skills in barbecue is knowing when to take someone else`s advice and when to trust your own judgement and tastebuds.

If they did , the meat would be awfully dry. Either 8 hrs is too long or the temp is too high. A full slab of spares takes 4-5 hrs at 220-250?. This will give you tender meat that tears easily when you separate the ribs, but not quite falling off the bone, like a stew. Some people do cook them longer at a lower temp.

says for "over 7 hours" on the site but the magazine article said "almost 8 hours" so thats where I got that figure.
So if yours took 7 hours then I can see how theirs might as well. Guess the ones I cooked werent as big.

Their site says 22 hrs for pork shoulders, which is reasonable, but 7 hrs for spares seems awfully long to me, unless the temp was pretty low.
And, after taking all that time to cook meat, they throw sauce all over it. Go figure.

like mine cooked where most of the fat has rendered out and the point at the end of the slab is starting to dry out. I would think 8 hours would require a lot of mopping to keep from being too dry.

and they were really tender but a little bit fatty/greasy. Tasted great but made me sick to my stomach from all the grease.

Absolutely 7 to 8 hours if you are gonna smoke em the right way!!
