    It is good (I have most of his books). It does not get down into the basic instructions as much as "How to Grill" and goes far more exotic than "BBQ USA". It is probably the best for a world variety, but I'm not really into grilling snails and whole sea bass with lemon grass, so I, personally, like the other two better. If you like exotic, though, it is definitely worth a look.

    It's good to know all kinds of 'variations' I think. It makes you want to explore more and more. Unless, of course, you're a 'traditional' bbq'er

    True enough. I have Raichlen's "Beer Can Chicken and 74 other offbeat recipes." It is more of the offbeat methods of cooking grill style than offbeat recipes. I've fooled myself (using offbeat recipes with regular ingredients) into thinking that's variety. I've tried a couple of truly different ingredients in the past, but keep going back to the basics. (I still can't abide snails :sick: ) :laugh:

    I like strong fatty meat, I sorta can find it in every offbeat recipe I've looked at till now. Spices? I like to experiment.

    Offbeat food, I've tried tuna (OK, it's offbeat to me...) pizza (smoky adds a really good flavor) peanuts (start with raw and smoke/cook them) beer can chicken (which isn't offbeat anymore) and some other stuff.

    Spices, I've tried most of them. I keep a white plastic shaker (like a really big salt shaker with big holes) mixed with some sort of rub or other to shake on the meat. After I run out of whatever I mixed up, I try a new combination out.

    Hmmmm whadda you say about hickory teriyaki beef kabobs? :P

    Peanuts sounds good, I'm going to try that as well - thanks {Feel-good-000200BB}

    Kabobs sounds good. Might have to try that.

    With the peanuts, mix up some butter, hot sauce, and some sort of a rub (I use a basic one with salt, pepper, paprika, and brown sugar), stir them in with the raw peanuts and let them set for 1/2hr or so, then smoke them off the heat in a pan on a the grill hot enough to cook them. Absolutely wonderful.:whistle:
