Poll: Can Pepper or Peppermill?
I love pepper and nothing tastes like freshly ground pepper that comes from a peppermill (I have one of those large copper ones).
I was over a friend`s home the other day, and they not only use pepper purchased in a can, the get the stuff from the Dollar Stores, where you get two for one buck. It`s not even black in color!

I tasted them I quit using canned pepper except in an emergency. When the Penzey`s pepper had about run out, I bought a one-pound (?) jar of much cheaper whole pepper (Malabar?) at Sam`s Club. It may not be as good as Penzey`s Tellicherry pepper, but I really like it and that`s what I use now.
Preground black pepper and freshly ground black pepper are like 2 different spices. They taste totally different if you use them when making sausage, and both are good. Preground black pepper is not bad if all you want is a little harsh heat without the lemony overtones, like on a fried egg, for instance, or to provide a visual contrast on a totally white food without making it too spicy for your Norwegian great-aunt (extreme example: poached fish served with cream gravy on white potatoes, boiled turnips, and white bread).

That stuff they call pepper from the dollar store is nasty. I call it Pepper Dust. I use fresh ground black pepper but the pepper mill I have now leaves it in bigger pieces than I like. Its more like chunks. My sister has one of the copper pepper mills and I swear I am going to steal it next time I am over at her house. Laura

[original of Penzey`s] Malabar and Tellicherry peppercorns, and I actually prefer the cheaper Malabar. It`s a less subtle taste than the Tellicherry.

retention, I am using Morton Light salt. Actually, what is the difference/benefit of kosher, and/or sea salt?

pepper has been ground the oil starts to go rancid. Rancid black pepper oil has been implicated in prostate cancer. On the other hand fresh ground is recommended as part of a dietary regimen that purports to reduce the risk.

I LOVE fresh cracked, but I still have to use pre-ground for cantaloupe.
