    Smoked Meatloaf

    Took the day off and figured it was a good time to smoke something. I have been meaning to try meatloaf for a while and gave it a shot. Its any old recipe that you like...I used 3 pounds of ground chuck and a pound of ground pork. Sauted half an onion, half a bell pepper and two cloves of garlic in bacon grease. Mixed the meats and combined the vegies along with some bread crumbs, dry parsley, onion powder, garlic powder, kosher salt and black pepper. Formed it into a loaf and cut parchment paper to size for underneath the loaf in the smoker. Put it on the smoker at 250 along with some country ribs. Usually you would want to cook the loaf at a higher temp but with the ribs on there Im taking it slower.

    Im taking the meatloaf off at 160 and will let it rest for a bit. I took pictures when it was put on and will take more when it comes off.

    Planning on mashed potatoes to go along with it.

    JimBabek, that sounds good :P I am looking forward to the photos so I can also visualize it (and pretend I smell the delicious vapors as I look at them) :P
