    What are you cooking on?

    I have been competing and catering for 10 years so my mix of cookers is all over, Weber Smokey Mountains, Primo ceramics, a couple of Weber Ranch kettles, Ole Hickory CTO and a EL-EDx (commercial cookers) the EL-EDx has 75 sq ft of grate space, can do 216 racks of spares at a time. Klose mobile w/ fajita grill.

    Over the years I have cooked on pellet cookers both Traegers and Fast Eddy's cookers, Jed Masters, BGE, and a number of different offset cookers.

    I have been teaching BBQ cooking for a number of years with pit control as part of the classes. If anyone has any questions I will do my best to answer with techniques that I know will work to produce high quality Q.

    My company uses American Kobe beef, organic Birkshire pork and organic chicken. The beef is prime so cooking techniques must be modified to produce the best product.

    I am not a competor nor a caterer, however I love to do parties and gatherings for the family and friends. I have an assortment of smokers ranging from a Meco water smoker(bullet type), a Brinkman SnP with side box, an old NewBraunsfeld RedRiver with side box and my favorite- a Tejas2040CC. Tried to get a photo of it but...:angry:
    I can do enough to satisfy most any group(up to 150 anyhow-I've done that). And given all my equipment at once, cooking in batches

    The Tejas is a nice looking unit. If you are cooking for 150 you could cater but party'n is more fun most of the time.

    Yep! My thing is to break even... I offer to "QUE" anything for anyone for the cost or reciept of wood and cost of meat (or they can bring thier own). Love it, wouldn't ask for a better hobby(excepting the wife only allows me so much a month to get my meat and such).
    Bummer, I'd spend a fortune on it if I could!!!LOL

    Well one thing about catering and vending you do get a chance to cook meat. We did a ton each of brisket and butt along with chicken and ribs in 11 days. Understand how you feel about cooking, do love to do it.

    Oh,that's just mine! She's not into BBQ as much as I am. So when I start talking about Queing, or talking to someone willing to listen, she kinda gets twisted!:blink: Oh, she supports me, but I would enjoy "Q" everyday but she's a typical Ohio girl and likes Mickey Burgers or Pizza Hut MOST `every meal.:whistle: Just a hafta keep
    feedin' her the smoke and hope she succumbs!!!:evil:
