    fabricating a smoker

    why are most of the indirect type smokers built horizontal with one or 2 grates. It seems like a waste of cooking space. I would like to stand my tank vertical and build maybe 8 racks one on top of the other like refridgerator shelving. Would drippings from one meat ruin another, like chickens over ribs or any combo i may have? I expect to have to shuffle them as well as have a top and bottom thermo.

    DZO, do any meat"EXCEPT" Chicken on top. The fowl is "ALWAYS" on the bottom. Beef and Pork is OK, unless you have a guest that complains. If they do, tell them to get outta your pit!!!!!LOL
