Question about Honey and molasses?
I am looking for some info regarding the effect of honey and molasses when put under heat for 6-10 hours. IF I use a slather or a rub with these ingredients would it become very black and sort of bitter tasting? I want to use them in a smoker but do not want them to get like this. How will it affect the outside of the meat (the bark)? Any input on this would be great.

I am not a fan of using honey or molasses. What I can tell you is that if I am going to use something with a good amount of sugar in my sauce then I do not put it on the meat until the near end of the cook. This is to prevent the color change and bitter taste that would occur.

I think that honey works well at the end but you still need to watch it carefully after you apply to your meat. Molasses seems to work slightly better hen honey but I think you should search around some more as I have not had much experience with this.

I just made some butts last weekend and use an injection made of honey, apple juice, brown sugar and some apple cider. They marinated overnight in the fridge. The next day I put on a rub which kept the honey and sugar not in direct contact with the heat on the grill. This worked well and it came out with a nice sweet taste and not bitter.
