    Pork Prime

    This weekend I am going try for the first time to cook up some prime pork and come country ribs. I have never smoked anything before so this is all new for me. I just finished making up a nice rub to use and am very excited to try it all out. I will share my experience with all of you. However I would appreciate any input you can give me to help me out. Thanks.

    I think that if you are making country ribs they are best done on the grill and not in the smoker. This is what I have heard anyways. I really wish you luck and please let us know what happens. I have never made country style before.

    I have wanted to try some country style ribs myself. Everyone tells me they are excellent. Please let us know how they come out.

    Country ribs are just pork butt that has been cut up I think. Can anyone clarify this for me?

    Please let us know exactly how you make them. I am very interested to know. Also I am sure they will come out tasting wonderful.

    Ok so here is what I did. First I dried off the meat completely so I could use a slather of mustard. I the covered with bacon and applied a rub. Then I let them marinate overnight in the fridge. The next day I took them from the fridge and let them sit for a half an hour. I cooked them at about 150 and used a spray every 45 minutes or so. It came out very nice with a very smoky taste. Unfortunately the taste seemed to cover up the taste of the rib meat a little too much.

    I would really like to know for how long you cooked them for and what kind of wood you used? Also did you smoke them for the complete time or did you grill them for a little bit as well?

    I love when they come out extra smoky. For me that is how I like them to taste.

    I let them cook for about 4 and half hours or so. The wood was hickory and some small pieces of oak mixed in as well. I cooked until the internal temperature reached 140 degrees.
