OK so my nickname is Mama wings for a reason ... and here is how I love my wings.
Make little cuts to the chicken wings before marinated.
For the marinade melt butter into hot and sweet chilly sauce.
Make sure the sauce is getting inside the wings.
Leave for an hour or two.
Put on the grill but don't make it too dry.
When it is out of the grill you can put it inside the war

I am looking for some info regarding the effect of honey and molasses when put under heat for 6-10 hours. IF I use a slather or a rub with these ingredients would it become very black and sort of bitter tasting? I want to use them in a smoker but do not want them to get like this. How will it affect the outside of the meat (the bark)? Any input on this would be great.

I have been cooking brisket for some time now and was asked by someone to cater an event with my famous brisket recipe. The trouble I have is that I usually cook them untrimmed and now I want to use meat that is already trimmed. Any advice on this cause I am at a complete loss. I need to get some practice in before the job.

For salsa:
1 orange peeled and cut into squares.
1 small tin of pineapple chunks with juice.
Half mango, diced.
2 fresh red peppers minced (jalapeno)
15 ml orange juice
1 tbsp chili
2 tsp white sugar
1 tblsp fresh cilantro, chopped.
For marinade:
1/2 cup fresh orange juice
10 ml olive oil
cayenne pepper
10 ml pineapple juice concentrate.

My wife and I are really fond of pulled pork. However we are not so young any more so we really have to watch the calories we eat. I was wondering if any one here has ever done a caloric analysis of smoked meats vs grilled. I rather think that the slow cooking in a smoker with the fat rendering out makes the meal relatively healthy. The question is, am I right? Any information would be appreciated

Hey, my family has a big whole hog cookout every year on labor day, and this year i`ve been put in charge of it as the new Q`er, as they have heard about my success with my pulled pork on my WSM. We basically dig a pit in the ground, put a grate on it, burn wood in an offset fire area and shovel coals. We put a giant aluminum rectangular cover over the top....mking basically a giant oven.
